600gr Taccole
2 small red and sweet Onions
2 Carrots
1 stick Celery
6 Cherry Tomatoes
Basil
Salt, black pepper
Extra virgin olive oil

 

Clean and cut the snow peas in segments of five centimeters. In a large skillet heat the oil with chopped onions, carrots and celery on medium high fire, when the onion starts to be translucent add vegetable. Stir well and leave to cook for few moment. Season with salt and pepper. Add cherry tomatoes cut in a half , basil, turn down the flame, cover and leave to cook until tender (about 25 minutes). Stir often and if looks to dry add some hot water, just few tbs. Serving adding more fresh basil and pepper. They are very good also room temperature!
