12 Squid already clean with their tentacles (small-medium size )
1 Lemon (divided into two halves)
1 clove Garlic
45gr Capers under sea salt prewashed, Parsley ( a handful)
150ml Extra virgin olive oil (100 for the sauce and the rest for cooking)
Black pepper
Pastry brush

 

For the sauce:
On a cutting board finely cut parsley, capers, garlic. In a small bowl mixing well the oil (100ml) and half lemon squeezed (more or less, depend on your taste), until reaching an emulsion. Combine it with the other ingredients, season with black pepper and mixing well. Leave to infuse the flavor in the oil for at least 20 minutes.

For the Squid:
In a small bowl mixing well the rest of the oil (50ml) and the other half lemon squeezed. Preheats a piaster and when you are sure that it is really hot, place your Squid. Brush it with the oil and lemon, turn often and brush. Cook for about 5 minutes in total for each side. Transfer in a serving plate, spread with the sauce and serving immediately!
