• Ingredients for 4 person:
    350gr Fusilli
    1 Red big Onion ( finely cut)
    3 Tuscan Sausages (peeled and crumbled)
    1 Small Eggplant (cut in stripes)
    Few Cherry Tomatoes (about 12, cut in half)
    ½ Glass of Red Wine
    1tsp of Sugar
    Extra Virgin Olive Oil, salt, black pepper

In a large skillet put the oil, the onion, the sugar and the red wine, cover and leave to cook for about 10 minutes, until onio become very soft. In the meantime bring another skillet, heat a generous quantity of olive oil and fry the eggplant . When are gold, remove from the pan, drain excess oil on paper towels and keep warm. In the same pan ( with some kitchen paper clean the bottom from the fried oil, in this way will be not to oily) transfer the 3 Sausages and cook for about 10 minutes. Add tomatoes, stir well and season with salt and black pepper. Transfer sausages and tomatoes in the pan with the caramelized onion, add also the fried eggplant and stir gently.
