Ingredients for one person:

130gr minced beef

1 anchovy fillet under oil

15/20 small size capers

½ tsp mustard

1small size shallot

2 tsp minced parsley

1 tsp fresh grated ginger’s root

Few drops lemon juice

2 tbsp extra virgin olive oil

For a good beef Tartare you would need high quality beef and right cut ( rump, sirloin, fillet…) all of these are tender and tasty. Ask your butcher meet for Tartare. Then cut the eventually extra fat, cut in slices and then in stripes and cubes. Just decide your favorite thickness. In a bowl mix well the ingredients: there’s not a rule for the quantity,  is up on your taste. Pour the oil in a bowl,  melt the anchovy, which is perfect ingredients to exalt  flavor with  salinity. With a fork broken it and stir until well mixed with the oil. Then chop capers previously deep in cold water to lose salt, parsley, cut shallot in dices, then add mustard, few drops of lemon, and a tsp fresh grated ginger root. Stir well and add the meat, mixing well to perfectly combine the ingredients, serve immediately. Remember that meat should be at the right temperature, not too cold to preserve taste and fragrance.
