Dear Fiamma and Ginny,
It's been about a month since my family got back from Italy and I just wanted the two of you to know that the cooking lesson we had with you was one of the funnest things we did in Italy.  We have cooked the meal you taught to us (Peposia, Pesto, and Panna Cota) for family and are now having friends over to cook it for them.  We even got a mortar and pestel for the pesto.  
Thanks again for the great food, company and lesson.

Myself and my husband had a wonderful time in Florence. The cooking course was fantastic the shopping trip to the markets was an experience in itself! The course was informative fun and hands on. Our two teachers, Ginny and Fiamma, were friendly professional and most importantly fun.
We had an excellent cooking session followed by an informal and leisurely lunch , munching on the wonderful dishes that we had prepared and drinking very appropriate Chianti. We were taught to cook exactly what we had suggested with a few extremely delicious extras thrown in for good measure.

having returned from our vacations, we would like to again say "Thank you" for the fabulous cooking lesson that we enjoyed with you and Deborah on 10 July 2007 at Borgo Pietrafitta. Indeed, in the meantime, we have already tried to re-cook some of your recipes and, even while still being in Tuscany, we cooked the "Fiori di Zucchini". Be sure that whenever we return we would very much like to repeat this nice lesson with you and we will recommend you to our friends visiting Tuscany.

Dear Ginny and Debra,
What a wonderful way to end our Italian Vacation. Thank you for adding the zucchini flowers to the menu, it really made my trip. I had been reading about them for months before we arrived. Unfortunately we do not get these where I live in the States, so I will be unable to try your recipe. Can you clarify for me the amount of flour to beer in the batter; I will use this batter for other vegetables.

We had a lot of fun taking the class with Theresa and you. The food was delicious. I have tried the peppered stew at home and it was very good. I haven't tried the ravioli yet as I don't have a pasta machine. Great memories to take back to Canada with us. I have recommended you to some friends so they might be contacting you in the future.
