We can’t wait to try the recipes you gave us! Both the dinner you prepared and the cooking lesson were very relaxing experiences and the food was phenomenal. You mentioned that you would send us the recipe for the Peposo and I look forward to receiving it so that I can make it for my family. We had a lot of fun taking the class with Theresa and you. The food was delicious. I have tried the peppered stew at home and it was very good. I haven’t tried the ravioli yet as I don’t have a pasta machine. Great memories to take back to Canada with us. I have recommended you to some friends so they might be contacting you in the future.

Hi there this is Beth ( Zoe’s mom) We so enjoyed our cooking lesson with you and Danny! Thank you for everything. Sam and I made the stuffed guinea fowl ( only with chicken) tonight and it was as wonderful as when we made it in Italy! We got rave reviews….we were nervous we wouldn’t be able to pull it off but it looked great! We did have to return the first chicken we bought because when we got it home the butcher really mangeled the bird and it was unstuffable…the second time around it was fine although they accidently cut off the legs! Anyhow thanks again for everything…hope all is well with your pregnancy.

What a wonderful way to end our Italian Vacation. Thank you for adding the zucchini flowers to the menu, it really made my trip. I had been reading about them for months before we arrived. Unfortunately we do not get these where I live in the States, so I will be unable to try your recipe. Can you clarify for me the amount of flour to beer in the batter; I will use this batter for other vegetables.

having returned from our vacations, we would like to again say “Thank you” for the fabulous cooking lesson that we enjoyed with you and Deborah on 10 July 2007 at Borgo Pietrafitta. Indeed, in the meantime, we have already tried to re-cook some of your recipes and, even while still being in Tuscany, we cooked the “Fiori di Zucchini” – see attached photo. Be sure that whenever we return we would very much like to repeat this nice lesson with you and we will recommend you to our friends visiting Tuscany.

Many thanks for your lesson. We bought a pastamachine ( 8 euros in a flee market ) and we also made pasta – tagliatelle – at home, and it succeeded very well. I recommended you to my friend, who is coming to Florence these days. I try to send you some photographs later.

Myself and my husband had a wonderful time in Florence. The cooking course was fantastic the shopping trip to the markets was an experience in itself! The course was informative fun and hands on. Our two teachers, Ginny and Fiamma, were friendly professional and most importantly fun.
We had an excellent cooking session followed by an informal and leisurely lunch , munching on the wonderful dishes that we had
prepared and drinking very appropriate Chianti. We were taught to cook exactly what we had suggested with a few extremely delicious extras thrown in for good measure.
