Who want to know the secret for making perfect roasted potatoes?

1 kg yellow potatoes serving 4 person.

First of all heat the oven at 200 degrees centigrade. Peel the potatoes and cut in cube ( about 3 inches) , wash them in a bowl untill water will be come clear and trasparent (in this way vegetables will lose the starche). Bring a large pot with salted water to boil. Add potatoes for 4 minutes ( to seal), drain them very well and dry on kitchen towel.

On a large baking sheet put a generouse quantity of extra virgin olive oil, pour the potatoes leaving space between them and sprinkle with more olive oil. Add some cloves of unpeeled garlic ( in this way they wont be burned) just doing a cut to takes out the cooking steam ( once they exploded!!) and some sprig of rosemary ( quantity of flavour depends on your taste!). Cook in the preheated oven for 1 hour in total, turning the potatoes after 30 minutes and adding salt just 10 minutes before done.

Your roasted potatoes will be golden and crunchy… Just perfect!!
